This restaurant has a signature dish - egg. Cooking egg is not difficult but cooking an evenly heated rolled egg is. I like this a lot as it doesn't have much seasoning. Just some light salt and fine cooking oil - that's how we can taste how the original flavour if the food is fresh enough. This restaurant made it!

Any kind of egg is good to me.
I was told the "warm spring egg" in Japan is very good.
