Was told about the food in Crystal Jade had been a bit too salty. I think I have talked about some local Cantonese dishes are indeed quite salty. So it really depends on what you order. For example, if you order the Chiu Chow pickled stir fried with string beans or steam pork patty with salty fish or the salty "Kai Choy" veggie with salty duck egg soup, how can it be not salty? Then lately we gave another try. So it turned out if we asked them to make the dishes not too salty on some "no preserved/salty" food, then it turned out it's pretty nice.
1. double boiled "black" chicken with bai Choy - this soup base is nice and this one is good for balancing a body "cool/warm" character and what in Chinese we call "balancing the cool and nourishing the hot". 2. Goose slices in Chiu Chow soaking sauce - pretty good too and highly recommended.
3. seafood thick soup - when we asked the manager not to make all the food salty. Then the chef used the 2nd broth to make this thick soup. It turned out pretty nice. Also recommended. 4. Roast "five belly" pork - a must try too and the best part of roast pork.
5. Bitter gourd with spare rib and soy bean casserole - quite a good balance of taste. 6. See - a "handsome boy" rice! Lai Po Heen shall send someone to here and see what we make the "handsome boy" rice.
7. Congee - at average and it's not what I want for congee, but for those who prefer the "pasty" texture, this is the one. 8. stir fried "square" fish with chicken and Kai Lan - pretty good too but the "square" fish needed to be sliced more thinly as it's a bit chewy. It had better be thin slices and this way it can be more crispy after deep fried.
9. deep fried shrimp and crab balls - quite above average and if it's a bit crispy on the outside and more juicy inside, it's better. deep fried shrimp/crab balls needs to be put with some half fat pork inside to make it more juicy. Then on the outside the oil temperature is very important. 10. mmh.. don't take it as the renowned osmanthus and goji berry jello, it's quite a good sweet. The goji berry is a bit too much and overwhelming the osmanthus frangrance.
11. Herbal jelly - pretty good and good for soothing your throat after some hot and oily food. 12. Hasmar with egg white in baked young coconut - also good and very nutrious

Was in Crystal Jade 3 days ago at Pavilion and the food here does not even look half as good as the ones in Paragon. It was also salty here.
When I went to Crystal Jade in August the food was very salty(although taste good).
But I was told this recent visit was good and not salty. So sometimes it is good to have a 2nd try.
On dessert item 10 we use chrysanthemum with Goji jello and the taste is very clear and only light sweet.
On item 8 what is the "square fish"? We use "Big Earth Fish" with Kai Lan here.

Yes, Android, some of the classic Cantonese dishes are quite salty due to the older time the fishermen and those porters need more salt to maintain their body's sweating. However, nowadays as we live in an environment where we don't need to sweat that much, we shouldn't eat that salty.
SS, "square fish" is 方魚 and it's "Big Earth Fish". This one is the essential ingredient for the wonton soup base.
Yes, supposed another jello is with goji berry, dried longan and chrysanthemum but the one with osmanthus should be a clear and fragrant with osmanthus. So it should be 2 different jello.

this time not salty, and most of the dishes were very delicious
i didn't plan to order the Supreme Seafood Soup (Baht 160++), but after tried one little spoon from Sea, i ordered my own bowl
after this meal i will put CJ Palace back to my dining list until it drops again!

True that we need to re-visit some restaurants which we got disappointed - just like I tried Lai Po Heen after 3 years of the last disappointment. However, LPH was even worse than 3 years ago. :)
I think there are some places you often talk are this crystal jade, lord jim and the french restaurant of Mandarin Bangkok. Look like you really like these places.
Yes Mr Sea is the major shareholder of these restaurants.
