Mistaken Identity - Chiu Chow Garden & Shanghai Garden, Hutchison's House, Central, HK

Last night I called the captain of Shanghai Garden and I sincerely brought up for his attention to the below dish no. 2. So together with some other dishes I tried their fellow restaurant on the 3rd floor Chiu Chow Garden, lately these restaurants start not to care about the original cooking cuisine.

1. Perserved veggie double braised with "five layer" pork 梅菜扣肉. As you can see it's not the specific type veggie 梅干菜, it's the common 梅菜. These 2 are totally different. The former one has a "wooden" aroma which is the essential part of this dish. It's not just the soy sauce. The latter can't be braised for a long time as it'll be too "paper" mashy. They should go to Wanchai Tsui King Lau and see what the original cooking of this dish. 2. I commented to the captain by telling them the original cooking of this dish is to have the light fragrance of the yellow cabbage津白. The ham salty taste is to bring out that unique fragrance of yellow cabbage. Now with this overwhelming sweet baby veggie娃娃菜, it just crashed. It's really artificial too. I further commented to the captain their menu is misleading because it's not 津白. I kept on "Jade Garden serves Ba Choy with mushroom with this baby veggie too. It's not Ba Choy.". So in all the Maxim's outlets, Ba Choy and Yellow cabbage are the same as this baby veggie. Don't you think it's not right?".
