Visited 2 ramen shops, Sapporo, Hokkaido, Japan

There are quite many shops, especially the local ones, that they don't need an English name.  I ran into the below 2 ramen shops and got curious due to the crowd.  These 2 are both very nice.  Thick broth and noodle in perfect texture.  On my taste preference, I like the latter one which is less salty but aromatic with the right amount of cha siu (Japanese BBQ pork).

Is this called the "won chuen egg"?

I guess the egg soaked in hot spring water is the way of cooking. This one is soaked in a kind of soy sauce. Anyway, we can still consider it is.
